Then I still have it in entirety locally (and on time machine). The same is true of every backup. You can have as many remotes as you want in git, however, if you are paranoid. Some people remote to their own dropbox as a secondary location.

Absolutely. Tell a story if your professor will accept it. I got away with it occasionally in science, computer science, and math courses. I often get bored of the technical writing required of a programmer, so I sometimes use this technique for app store descriptions, technical documentation, and even for version control commit messages.
